One of my husband’s favorite meals from his childhood is Ham and Beans with Cornbread. I try to humor him the best I can in the truck so the slow cooker has proven invaluable. Here is my recipe.
1/2 pound dry beans, whatever your preference almost any taste just as good
1 onion chopped
2 tsp garlic powder
1 canned ham (the 1 lb size) cut into 1″ chunks (I buy these at dollar stores and keep them in the truck as we also use them for sandwiches, omelets, etc.)
1 Tbsp Cajun seasoning
Salt and pepper to taste
3 cups water
Put crock pot liner in pot. Add all ingredients and cover. Cook on low approximately 8-9 hours or on high about 6 hours. Serve with corn muffins or Hoe cakes made in your electric skillet. (I use hoe cakes made from 1 box jiffy cornbread mix prepared according to directions and prepared like pancakes in a nonstick sprayed skillet.)
