Rice cookers are similar to a hot pot. Most now come with a steaming basket included.
I use one daily to make rice and steam chicken and veges in the basket on top at the same time.
They can be used for oatmeal in the morning and for reheating soups and other canned items.
There are many websites dedicated to alternative uses for rice cookers.
They can be used while the truck is in motion if placed in a baking pan that has been secured to the floor of the truck. This can be done by sticking velcro to the bottom of the baking pan and sticking it directly to the carpet. Bungees can also be used to secure the pot in an upright position by attaching both metal hooks of the bungee to one handle and looping the cord around the end of pan–one at each end.

If you don’t mind, would you please provide some additional information?
1. Why does a rice cooker need to be placed in a baking pan?
2. Will the Velcro between the pan and the carpet hurt the surface of the carpet?
3. To prevent the rice cooker from upsetting in the floor, could it be put in a sturdy, temperature-resistant milk crate lined with towels?

Thanks Vicki. I am no longer on the road, but found your page informative and helpful.
Additional information:
1. Mainly it prevents any accidental spills or boil overs from getting on the carpet.
2. It depends on the carpet and the velcro used. I used a removable and replaceable piece of carpet instead of the main floor piece for cooking anyways.
3. Possibly, but it would depend on the cooker. The one I used got hot enough to burn you on the outside so I just preferred to keep it away from anything else to be on the safe side. There are newer models that don’t get hot on the outside though.
